Easy Pepperoni Pizza Salad Recipe
I’m all about the salads right now, and half the trick to that is keeping them creative enough to keep my family interested!
This EASY Pepperoni Pizza Salad recipe is SO good and perfect as the nights are getting warmer. This is another one of those recipes that you can put into your meal rotation and change up a little bit each time depending on what you have on hand. It’s also a great one for kids just learning to help with meals as it’s easy and it’s obviously no bake.
Easy Pepperoni Pizza Salad Recipe
We do salads for dinner (and lunch!) quite often in the summer. I love to get out our huge salad bowls and sit on the deck overlooking the garden because that’s where many of our salad ingredients come from, so recipes like this are a double win!
Ingredients:
8-ounce package lettuce
2 cups cherry tomatoes, quartered
6-ounce package sliced pepperoni, cut into quarters
½ sweet red pepper, sliced
½ red onion, sliced
4 ounces mozzarella cheese, shredded
½ cup olive oil
1/3 cup seasoned rice vinegar
1 teaspoon fresh parsley, chopped
¼ teaspoon Italian seasoning
1 teaspoon minced garlic
¾ teaspoon salt
½ teaspoon pepper
5.5-ounce package Italian seasoned croutons
Directions:
Add first six ingredients to a large bowl and toss together. Cover the salad and chill for at least 4 hours if possible.
Before serving, combine next seven ingredients in a jar with a tight lid and shake to combine. Pour over salad and toss the salad to incorporate throughout the salad.
Top the salad with croutons and serve.
Makes 6 servings.
I’m big on doubling recipes and this is definitely one that I like to double because it makes a great lunch the next day – so when I do that, I separate out the extra salad and withhold the dressing for it until I’m ready to eat/serve it the next day.
