Easy Pumpkin Spice Cookies Recipe with Homemade Cream Cheese Frosting
With fall right around the corner, I am starting to dig out my favorite fall recipes.
We love pumpkin around here, so this Pumpkin Spice Cookies Recipe was at the top of my list of recipes to share with you. I think that sometimes the most simple pumpkin recipes are the best, and this one won’t disappoint!
Best of all? These cookies are easy to make and the cream cheese frosting is amazing!
Pumpkin Spice Cookie Ingredients
1 box of spice cake mix, any brand
2 eggs
½ C. canned pumpkin
Cream Cheese Frosting Ingredients
1 8 oz. brick of cream cheese, softened
1 C. whipped topping (such as Cool Whip)
1 tsp. vanilla extract
½ C. sugar
Directions for making Easy Pumpkin Spice Cookies
Preheat your oven to 350 degrees and spray your baking sheets with a nonstick spray.
Combine the cake mix, 2 eggs and canned pumpkin and mix well. Depending on how thick
your dough is you may want to add an additional tablespoon of pumpkin one at a time.
Drop by rounded tablespoon onto your baking sheets about 23” a part.
Bake 9-11 minutes.
How to make Homemade Cream Cheese Frosting
In a medium size bowl, blend the softened cream cheese, whipped topping and sugar with a hand mixer.
Frosting will be light and airy. Generously spread the frosting onto the cookies.
Makes approximately 2 dozen cookies. Enjoy!

How is it cream cheese frosting without using any cream cheese?

Still don’t see the amount of the Cream Cheese and it says to add whipped topping..,..????
Because the frosting has whipped topping, do these need to be refrigerated?
