Spicy Chicken Stir Fry
Ingredients for Spicy Chicken Stir Fry
- 1 pound skinless, boneless chicken breasts cut into cubes
- 1 TBS sesame oil, divided
- 1 TBS rice vinegar
- 2 TBS soy sauce
- 2 tsp sriracha or chili paste
- 1/2 cup fat-free, low sodium chicken broth
- 2 tsp cornstarch
- dash of salt
- 2 TBS vegetable oil, divided
- 1 cup snow peas, cut in half
- 1/2 onion, sliced thickly
- 1 yellow bell pepper, sliced thickly
- 1 red bell pepper, sliced thickly
- 1 TBS fresh ginger, grated (about 1 inch of ginger root)
- 2 garlic cloves, minced
- 2 green onions, sliced thinly
- sesame seeds for garnish
How to make Chicken Stir Fry
1. Whisk 2 teaspoons of sesame oil, rice vinegar, soy sauce, sriracha, chicken broth, cornstarch, and salt in a small bowl and set aside.
2. Heat a large skillet (or wok) over medium-high heat and add 1 tsp sesame oil and 1 TBS vegetable oil. Add chicken and cook, tossing around skillet or wok for 4 minutes. Remove chicken from pan and set aside.
3. Add 1 TBS vegetable oil to skillet and then add the peppers, onions, snow peas, garlic, and ginger and saute for 1 minute. Add the broth mixture and cook for 30 seconds or until the sauce thickens. Return chicken to the skillet and stir fry for 4 more minutes or until chicken is cooked through.
Top stir fry with green onions and sesame seeds. Serve with a side or rice or whatever you prefer. Enjoy!
