Happy Sunday! Looking for a great way to get your kids to eat a healthy breakfast?

Put it in a muffin tin! Your family will love these bacon, egg and cheese filled Muffin Tin Breakfast Cups and you will love how simple this breakfast is to make!

Usually we do a big breakfast on the weekends, but if it’s a busy (or lazy!) day, then I love this recipe for a yummy but simple breakfast.

This is also one that we enjoy on those rare school mornings when I have a bit of extra time.

These Bacon, Egg and Cheese Muffin Tin Breakfast Cups are a simple and delicious breakfast that your family will love!

Muffin Tin Breakfast Ingredients

Ingredients for making muffin tin breakfast cups

  • 6 slices of bread
  • 1 cup cooked bacon, chopped
  • 6 eggs
  • 6 slices of Colby jack cheese
  • salt and pepper

How to make breakfast cups

Breakfast Bread

Using a rolling pin, flatten out each slice of bread. You can remove the edges if your family isn’t a fan of the crust. Note: if you like your eggs more well done, cut the edges off the bread or they may get too well done.

Muffin Tin

Lightly grease a muffin tin with butter or a butter flavored spray. Next, tear your bread on the side towards the middle so that you can fold it into a cone shape so that it will fit in the muffin tin cup. Place the bread in the muffin tin.

Bread Cups

Your “bread cups” should look something like this when they are in the tins.

Cheese Filled Bread Cups

Take each slice of cheese and tear in half so that it will sit nicely in your bread cup.

Bacon Cups

Sprinkle the bacon on top of the cheese in each of the cups.

Egg Cups

Break an egg into each of the cups. 

Muffin Tin Breakfast

Place the muffin tin into the oven and bake at 375 for about 15 minutes or until you are happy with how cooked your yolks are.

Ingredients

  2. You REALLY need to EDIT and REFORMAT the recipe. It’s jumbled and unprintable as it is. Makes little sense.
