Muffin Tin Breakfast Cups
Usually we do a big breakfast on the weekends, but if it’s a busy (or lazy!) day, then I love this recipe for a yummy but simple breakfast.
This is also one that we enjoy on those rare school mornings when I have a bit of extra time.
Bacon, Egg and Cheese Muffin Tin Breakfast Cups
Ingredients for making muffin tin breakfast cups
- 6 slices of bread
- 1 cup cooked bacon, chopped
- 6 eggs
- 6 slices of Colby jack cheese
- salt and pepper
How to make breakfast cups
Using a rolling pin, flatten out each slice of bread. You can remove the edges if your family isn’t a fan of the crust. Note: if you like your eggs more well done, cut the edges off the bread or they may get too well done.
Lightly grease a muffin tin with butter or a butter flavored spray. Next, tear your bread on the side towards the middle so that you can fold it into a cone shape so that it will fit in the muffin tin cup. Place the bread in the muffin tin.
Your “bread cups” should look something like this when they are in the tins.
Take each slice of cheese and tear in half so that it will sit nicely in your bread cup.
Sprinkle the bacon on top of the cheese in each of the cups.
Break an egg into each of the cups.
Place the muffin tin into the oven and bake at 375 for about 15 minutes or until you are happy with how cooked your yolks are.
