Easy Snowman Cupcakes
One of my favorite things about holiday baking is making desserts and recipes that also serve as holiday decor. These fun and easy snowman cupcakes will do just that! You can make these cute cupcakes all through the holiday season and they will be perfect for your Christmas party celebration!
This recipe is so easy in fact that it’s also a fun children’s activity for your Christmas parties or winter themed classroom event. You could also make the creation of these cute snowman cupcakes a party activity – a great way to entertain the kids and have them help in making these fun treats!
How to make Easy Melted Snowman Cupcakes
You can of course make these adorable snowmen cupcakes using store bought vanilla cupcakes, chocolate cupcakes or a box of cake mix, but we love making cupcakes from scratch. This homemade cupcake recipe is our favorite cupcake recipe and I think you’ll find that it tastes better than any box cake mix.
Ingredients for Homemade Cupcakes:
- ¾ cup all-purpose flour
- 2/3 cup cocoa powder
- 1 tsp baking powder
- 2 large eggs, (at room temperature)
- 1 cup granulated sugar
- 1/3 cup vegetable oil
- ½ cup milk
- Pinch of salt
- 2 tsp vanilla extract
- 1 package large white marshmallows
Ingredients For Homemade Royal Icing Recipe:
- 1 egg white
- 3 tbsp lemon juice
- 1 + 1/3 cup (175 g) powdered sugar
- Food Coloring (orange, black and whatever colors you want for snowman buttons)
How to Make Homemade Cupcakes from Scratch
Pre-heat the oven to 180 C / 350 F
In a large mixing bowl whisk the eggs, sugar, and vanilla extract by hand or with an electric mixer.
When the mixture become fluffy add the milk and oil and continue to whisk or mix on medium speed.
In another bowl sift the dry ingredients, (flour, cocoa powder, baking powder and salt)
Add the dry ingredients into the mixture and mix them for a couple of minutes, until smooth.
Prepare cupcake pan (muffin tin) with cupcake liners.
Pour the cake batter into cupcake liners and bake for 18 minutes or until a toothpick comes clean.
Remove cupcakes from oven and let them cool.
How to Make Homemade Royal Icing
For the royal icing recipe, mix the egg white, and powdered sugar first.
Then add the lemon juice for your desired consistency. You don’t want it too thick or thin, so add lemon juice slowly and adjust accordingly.
How to Decorate Cupcakes with Melted Snowmen Using Marshmallows
After cupcakes have cooled, put the royal icing on top of each cookie and decorate each with one large marshmallow.
In separate bowls, mix small amounts of frosting with food coloring to create the colors you’ll want.
(black frosting, orange frosting and the colors for the snowman’s buttons)
Draw the face (snowman eyes and carrot nose) on your marshmallow head using a toothpick or decorating bag or tool.
Cute Melting Snowman Cupcakes Recipe Tips:
This homemade Royal Icing recipe is a favorite for this easy recipe because it has a wonderful texture, perfect for the melted snowman look on the top of each cupcake. However, if you are short on time, you could also go with a store bought vanilla frosting (any white frosting will do – vanilla buttercream frosting, cream cheese frosting, etc)
We love to make these adorable melting snowman cupcakes with chocolate cupcakes but of course you could use vanilla cupcakes, but lighter cupcakes create more of a contrast on the sides of the snowman which helps the frosting to look more like melted snow.
If kids are helping, you might find that tiny frosting or candy icing pens work well for the fine details like the snowman’s eyes, nose and arms.
