- 1 cup butter, melted
- 1 1/4 cups sugar
- 1 egg
- 3 ripe bananas
- 3 tablespoons of strong coffee or espresso
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup chocolate chips

Banana Mocha Muffin Recipe
So delicious, this Banana Mocha Muffin recipe is a great way to use up bananas and also make a delicious breakfast muffin. These also freeze great so a nice way to stock up on those grab and go breakfast options!
Ingredients
- 1 cup butter, melted
- 1 1/4 cups sugar
- 1 egg
- 3 ripe bananas
- 3 tablespoons of strong coffee or espresso
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup chocolate chips
Instructions
In a large bowl, mash the 3 bananas very well.
Add in the sugar, egg, and vanilla extract and mix well.
Add in the butter and coffee.
Mix in the salt, flour, baking powder, and baking soda.
Fold in the chocolate chips.
Drop the batter into lined muffin cups using a muffin scoop. This recipe will make about 12 jumbo muffins or 24 regular sized muffins.
Bake at 350 degrees for about 25 minutes or until a toothpick inserted into the muffins comes out clean.
