Banana Mocha Muffin Recipe

Anyone else a fan of ways to use up bananas? I always over buy them, and this is one of the reasons why!
 
This Banana Mocha Muffin recipe is not only so yummy, but also easy to make and these muffins freeze beautifully!
 
I like to double these types of recipes so that we can have grab and go breakfast items in the freezer when we need them and these also work great for afternoon snacks for moms on the go!
 
Plus, I’m always a huge fan of anything that includes a handful of chocolate chips!

Perfect for breakfast on the go, this Banana Mocha Muffin recipe is a big win and it freezes beautifully!

 

Ingredients for Banana Mocha Muffins

 
  • 1 cup butter, melted
  • 1 1/4 cups sugar
  • 1 egg
  • 3 ripe bananas
  • 3 tablespoons of strong coffee or espresso
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup chocolate chips

How to make Banana Mocha Muffins

 
In a large bowl, mash the 3 bananas very well.
Add in the sugar, egg, and vanilla extract and mix well.
 
 
Add in the butter and coffee.
Mix in the salt, flour, baking powder, and baking soda.
 
 
Fold in the chocolate chips.
 
 
Drop the batter into lined muffin cups using a muffin scoop. This recipe will make about 12 jumbo muffins or 24 regular sized muffins.
 
 
Bake at 350 degrees for about 25 minutes or until a toothpick inserted into the muffins comes out clean. We enjoy ours with a crispy edge, so you can play with the timing a little based on your preference.
 
Like I mentioned above, this is a great muffin recipe to make in bulk and freeze and you will also really love the way that they make your kitchen smell, so yummy!
