Ham and Cheese Bites Recipe

Looking for a great make ahead breakfast or brunch (or even lunch!) idea? These Ham and Cheese Bites are simple to make and are perfect for on the go! Great little protein boost too, so if you have kids in sports, they make wonderful little bit sized meals to take along.

We also really enjoy these for camping trips, and I’ll often leave them right in the muffin tins and cover them with foil until we need them.

Ingredients for making Ham and Cheese Bites: 

For the Tartlets/Shells/Cups:

  • 3 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 3/4 cup flour plus 1 tablespoon
  • 1/4 cup cornmeal

For the Filling:

  • 1 egg
  • 1/3 cup heavy whipping cream
  • 1/2 cup ham, diced
  • 1/2 cup cheddar cheese, shredded

To Make the Tartlets/Shells/Cups:

Ham and Cheese Tarts

Beat cream cheese, butter, flour and cornmeal with a mixer until combined well. Shape into a ball and wrap in plastic wrap. Refrigerate for 1 hour.

Preheat oven to 425. Grease a mini muffin pan.

*note: I usually use a mini muffin pan that has 12 cups, but recently discovered this 24-cup mini muffin pan and I’m obsessed, especially since this is a recipe that I often double. 

Making Ham and Cheese Cups

Remove dough from the refrigerator, remove the plastic wrap and shape into 1″ balls. Press balls into prepared pan with a tart shaper.

Ham and Cheese Mini Muffins

In a small bowl, combine egg and whipping cream. Whisk until combined. Stir in ham and cheddar cheese. Spoon into baking cups.

Bake at 425 for 7 minutes. Reduce heat to 325 and loosely cover with foil. Bake 15-20 minutes or until center is set. Let cool slightly before removing from pan and serving warm.
