One Pan 15-Minute Kale and Eggs Recipe

This One Pan 15-Minute Kale and Eggs Recipe is a quick and easy way to start your day off with some great nutrition! It serves one, but can easily be double or tripled. Just be sure to use a bigger pan and increase the cooking time as needed.

I’ve really been making an effort to get more nutrition into my diet and in doing so, I have found myself cooking with kale more and more. It’s inexpensive and there are so many different ways to incorporate it into meals, especially breakfast.

This quick and easy Kale and Eggs recipe will be a favorite for healthy starts in the morning!

Ingredients for making Kale and Eggs

1 medium eggs (use 2 eggs if you like)
2 large kale leaves
1 tablespoon green onion
1 tablespoon red onion
1 teaspoon olive oil
1 tablespoon Parmesan cheese
Salt & pepper to taste

How to make Kale and Eggs breakfast in one pan

In a small skillet, heat the olive oil over medium-high heat.

When the oil is hot, add the red onion and sautÈ for 1-2 minutes or until cooked to your liking.

Turn the heat down to medium, add two tablespoons of water and the kale. Cover and cook for one minute.

Uncover, stir and cook for an additional minute, stirring frequently.

When the kale is wilted, sprinkle on most of the green onions and Parmesan, reserving some for garnish.

Carefully crack the egg in the center of the pan, moving the kale around as needed to keep it in the center as much as possible.

Sprinkle a little salt and pepper over the eggs and kale, cover and cook for approximately five minutes or until the egg is set to your liking.

Serve with the remaining green onion and Parmesan sprinkled over the top.

Notes:

You can also add some cooked, crumbled bacon or cooked turkey sausage to this for added flavor, texture and protein.

Serve some toasted baguette or ciabatta slices alongside this dish for dipping, if desired!
