Colorful Jell-O Cookies Recipe

Jell-o cookies are a big hit around here, and they are so bright and colorful that they add a fun touch to any event. They have a real zingy taste to them, especially depending on what flavor of Jell-o that you select. This recipe is SO easy, and my hubby and kids LOVE them!

3/4 cup of butter (softened)
1 3oz. packet of Jell-o (I used raspberry)
1/2 cup sugar
2 eggs
2 1/2 cup flour
1  tsp. baking powder
1 tsp. salt

Directions: Mix the butter, jello, sugar and eggs together in mixing bowl. Add in remaining ingredients. Depending on your time frame, it isn’t necessary, but it might be easier to let them chill in the fridge for about 20 minutes. Roll into balls (I like to use a small scoop) and drop them onto a cookie sheet and bake for 8-10 minutes at 350 degrees. *I recommend keeping a close eye on them as they brown quickly and you want to take them out just before they brown.

  1. We attempted to make these today without success. :( There was no colour to be found in the biscuits. Unsure of where we went wrong according to the recipe but have googled similar recipes and all appear to add food colouring to attain the vibrancy and we concurred that we should have “beat” the mix and not “mixed”. We are going to try this recipe again with those minor changes and cross our fingers that they will turn out like your beautiful biscuits. Thanks for sharing :)

  2. Hi JoJostar! We have made these for years and I have never used food coloring. Did you use the Raspberry Jello? That is the one that I used above (it can’t be instant or sugar free) and it always makes this bright color. I have used many other Jello flavors over the years and they always come out vibrant. Perhaps you are using a different brand of Jello? So sorry that they didn’t turn out, please let me know how your next batch comes out! *I have never beaten ours either, always mix.

  3. Do you know how many cookies this recipe will make? I’m planning on making a couple different colors for a rainbow themed party, but not sure if I should divide the recipe or make 4 recipes. Thanks!

  4. Well, I made the recipe and it made 18 cookies using a standard cookie scoop. Also, I made red (strawberry), blue (berry blue), green (melon) and yellow (lemon). The red and blue were very vibrant in color, but the yellow and green were VERY pale, pastel at best. I think the color vibrancy really depends on the flavor that you use. Good luck!
