Sloppy Joes and Tangy Coleslaw

Today’s Sunday Share is a fun new twist on an old favorite: Sloppy Joes with a unique coleslaw side.

 

Tangy Coleslaw:

2 tablespoons sugar
2 tablespoons canola oil (I used only one)
1 tablespoon cider vinegar
1 tablespoon yellow mustard
1/4 teaspoon coarse salt
4 cups cole slaw mix
1 mango , cored and cut into chunks
Directions: Combine the sugar, oil, vinegar, mustard and salt in a large bowl. Add the coleslaw and mango and toss gently to coat.

Sloppy Joes with a Twist:

1 pound ground beef
1 yellow bell pepper , cored and chopped
1/2 cup frozen corn
1 10-ounce can tomatoes with chilies, undrained
1/4 cup ketchup
2 tablespoons yellow mustard
2 green onions , chopped
4 hamburger buns

Directions: Heat a large nonstick skillet over medium heat. Add the beef and pepper and sauté for 5 minutes or until the meat is browned, stirring to crumble.

Drain well and return meat mixture to the pan. Add the corn, yellow pepper, tomatoes, ketchup and mustard and cook for a few minutes or until thickened. Heat hamburger buns in foil in the oven.

Serve sloppy joes on buns and garnish with green onions.
