How to make Homemade Pesto Zoodles out of Zucchini

- 2 C. fresh basil leaves
- 1-2 tsb minced garlic
- 1/3 C. olive oil
- 3-4 medium zucchini
- 1 pint of cherry tomatoes, cut in half
- salt & pepper to taste
Add the fresh basil leaves, garlic and olive oil to a food processor and pulse until well blended.
Cut the ends off the zucchini and use the spiralizer to make 'zoodles'
Heat 2 tsp. of olive oil in a pan on medium heat and saute the zoodles for about 10 minutes until heated through.
Add in fresh pesto and cherry tomatoes and continue to heat through for another 3-4 minutes.
Add salt and pepper to taste.
