Cucumber Watermelon Infused Water Recipe

One of the best parts about summer (especially here in Idaho!) are the refreshing summer drinks! I try to get creative while keeping it healthy.

This Cucumber Watermelon & Mint Infused Water is the perfect combination of “ahhhhh!” and “mmmmmmmm!” with no regrets or added sugars to make you feel yucky after the initial refreshment wears off. It also happens to be lovely to look at, so it’s really fun for BBQs and parties as well!

Ingredients for making Cucumber Watermelon Infused Water

One 16 oz. canning jar
4­-5 small chunks of fresh watermelon
1⁄2 of a medium size cucumber, cut into slices
1⁄4 cup of fresh mint leaves

How to make Cucumber Watermelon Infused Water

Add the cucumber slices, watermelon chunks and fresh mint leaves to your 16 oz. canning jar. Rip the leaves in half for more flavor. Next, use a spoon or a fork to gently mash the fruit down a little bit. This will let the juice out of the fruit to infuse your water.

Fill the jar with water, place the cover on, give it a good shake and refrigerate overnight for the best flavor.

*Makes 2 servings. One 16 oz. jar = 2 servings

**If you’d prefer to use a larger or smaller canning jar, simply double or triple the recipe ingredients and refrigerate overnight.

I love having this drink in the summertime, so I try to keep the ingredients on hand. We grow cucumbers and mint in our garden, so that part is easy. If I don’t have watermelon then I’ll still make this drink, it’s just much better with the watermelon. 

My kids love this as a grab and go summer refresher, so quite often I’ll keep it in a bit jar in the fridge, so you can modify the recipe to larger portions if you are serving more people.

Ingredients

  • One 16 oz. canning jar
  • 4­-5 small chunks of fresh watermelon

  • 1⁄4 cup of fresh mint leaves
