Avocado Chicken Salad Recipe
I often make this recipe with leftover cooked chicken or I’ll purchase a rotisserie chicken to have on hand to through together this quick chicken avocado salad recipe. One of the best things about this delicious and healthy avocado chicken salad recipe is how quick it is to make and how you can make it with healthy ingredients without too much work!
- chicken, cooked and shredded
- avocado (make sure to use ripe avocados)
- onion, sliced (either a white onion, red onion or even green onion will work)
- fresh cilantro
- lime juice or lemon juice to taste
- salt and black pepper to taste
- mayonnaise (mayo is optional)
- pickles (optional, but I love a good sweet pickle in this creamy chicken salad – it adds SO much flavor!)
How to Make Avocado Chicken Salad
Mix all ingredients in a large bowl. I usually use 2-3 cups of chicken and 1-2 avocados. Of course, this will depend on the size of your avocados but if you are going for a creamy texture, the more the better. If you use a large avocado, you might only need one.
Since this is a healthy chicken salad option, I try to avoid the use of mayo – but sometimes it’s needed to get that creamy consistency. I have made this particular recipe with greek yogurt with the avocado mixture as well, and that helps to keep it creamy too. I love the fact that this is a chicken salad recipe with no mayonnaise but I’ve definitely had to add mayonnaise in the past just to get that creamy texture. I’ve also tried greek yogurt and ranch dressing and both bring a unique flavor!
To be honest, this is a quick lunch idea that I throw together and it’s made with such simple ingredients that it’s pretty easy to put together as long as you have the chicken ahead of time and the ingredients on hand. It makes such a light lunch that’s also easy on the budget.
Tips for Making Chicken Avocado Salad
Store in a glass bowl in the fridge covered in plastic wrap. This great salad is so yummy served cold. It also makes a great afternoon snack when you serve it on crackers.
Serve this avocado chicken salad on a bed of greens or romaine lettuce. OR Less healthy, but so delicious – serve this as an easy lunch on sandwich bread or croissants.
If you are looking for a different way to serve this delicious salad, consider serving on pita bread with salad greens like spring mix or butter lettuce. Fresh parsley is also a yummy addition. So good!! You could also serve it with a side of tortilla chips.
