Hash Brown Bacon Breakfast Sandwich
Not the best name ever, but that’s the beauty of creating something … you get to name it! This EASY breakfast sandwich recipe is one of our favorites!
For the sake of this recipe share I’m calling it the Hash Brown Bacon Avocado Breakfast Sandwich, but to be honest, my family calls these hash sandwiches. I didn’t think google would love that too much, so I’m going with the longer wordier version.
Regardless, it’s EASY and that’s just another reason that it’s so awesome.
If you don’t keep hash brown patties in your freezer, then you have no idea what you are missing. We use them a LOT and that’s probably how this little breakfast sandwich concoction came to be. I’ve got a teen boy that eats a lot, and very little time in the mornings to bring it all together.
I will admit that most mornings, this recipe looks nothing like these photos.
Definitely jazzed this recipe up for the fact that I was sharing it with all of you but once you get the idea, you can literally throw these hash brown sandwiches together any way you like.
The key is: EASY.. and using whatever you have on hand to make it work. Some mornings, I literally take scrambled eggs and sandwich meat to make this work. Again, this is the fancier Sunday morning version.
Ingredients for Hash Brown Bacon Avocado Breakfast Sandwich
Makes two sandwiches:
4 potato hash brown patties
4-6 slices of crispy bacon (this Snake River Farms Kurobuta Bacon is amazing!)
(for ease, pre-cooked Bacon is a great option too)
Topping ideas for Hash Brown Bacon Avocado Breakfast Sandwich
(honestly .. the options are endless (I used the top four):
Tomato slices
Avocado mash or slices
Cheese of your preference
Fresh fig slices
Hot sauce
Fried egg
Sausage
Ham
Fresh herbs
Instructions for Hash Brown Bacon Avocado Breakfast Sandwich
Cook the bacon per package instructions.
Turn on the waffle iron to about medium-medium high.
The hash browns are typically frozen so place them on a paper towel and microwave for 2 minutes.
This will soften them up enough to nicely fit in the waffle iron and be able to close the lid right away (vs if they are frozen they would likely start to burn at the contact spots with the iron and still be frozen everywhere else).
Grill in the waffle iron until super crispy-I personally enjoy them more when extra crispy-but they will also hold together much better therefore holding your sandwiches together better!
While the bacon and hash browns are cooking you can prep your additional toppings.
As soon as the hash browns are done cooking and crisping add the cheese so it will start to melt.
Pat the bacon dry to remove excess grease.
Stack up your toppings on the hash browns and enjoy right away.
This is hands down one of my favorite breakfast options for those crazy mornings when I want to get something on the table before everyone heads out the door, but a REAL breakfast isn’t an option.
I also love these Hash Brown Bacon Breakfast Sandwiches because I can make the hash brown part and add the toppings as each member of our family comes through the kitchen on their way out the door.
Side question? Is hash brown one word or two? Google tells me it’s two, but honestly up until this moment, it’s always been one word.
