Easy Lentil Salad
Looking for a healthy lunch to make this week? This easy Lentil Salad contains healthy and fresh ingredients and is perfect if you are trying to come back from a few months of not so healthy eating. (guilty!) One thing that I love about this easy lentil salad recipe is that it’s quite easy and quick to throw together, and I find if filling enough to keep my energy level high throughout the afternoon.
This salad also works great as a side to a larger meal, but since I usually eat lunch at home alone during the day, I am always looking for quick and healthy options. Sometimes I will make a larger bowl of this easy lentil salad to go along with our family dinner, and that way I also have a lunch portion for myself.
Easy Lentil Salad
Ingredients:
- 2 cups spinach
- 3/4 cup cooked black lentils
- 1/2 cup great northern beans, drained and rinsed
- 4-6 fresh mushrooms, sliced
- 1/4 cup red onion chopped
- 1/2 orange pepper, chopped
- 1 small tomato, chopped
- Your favorite salad dressing
Directions:
Mix all ingredients together in a large bowl. Add your favorite dressing and enjoy as a healthy, protein packed meal or side dish.
Isn’t this easy Lentil Salad pretty? Sometimes I will top my salads off with different cheese and a sprinkling of parmesan is my favorite with this one, or you might even try a scoop of cottage cheese.
