2 Ingredient Sweet Potato Brownies

This is such a great recipe that I have actually started keeping these two ingredients on hand at all times because this recipe is such a great go-to when you are in need of an awesome dessert but are short on time!

I wouldn’t say that these are exactly healthy brownies, but they definitely bring the vitamin a and other nutrients that regular brownies might not have. While sweet potatoes are an unlikely ingredient in a chocolatey brownie, they are a rich source of fiber and a great way to satisfy chocolate cravings!

How to Make Sweet Potato Brownies with just TWO ingredients!

Ingredients for Sweet Potato Brownies

Ingredients:

  • 1 18-ounce box chocolate brownie mix
  • 1 15-ounce can sweet potato puree
  • Powdered sugar, optional

Instructions:

Preheat your oven to 350 degrees F.

Spray a 9×11″ baking dish with non-stick cooking spray and line with parchment paper.

Add the brownie mix and the entire can of sweet potato puree to a large bowl (mixing bowl)

Easy Sweet Potato Brownies

Stir until thoroughly combined. *If you do use a mixer, I would do this on low speed.

Baking Sweet Potato Brownies

Pour the brownie batter into your prepared pan or baking dish and place in the center of the oven,

Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean.
(bake time can vary, so keep a close eye on them)

*The top of the brownies should start to crisp up but you want moist chocolate brownies so make sure you
don’t over bake them!

2 Ingredient Brownies

To serve, dust with a little bit of powdered sugar, if desired. You could also sprinkle with dark chocolate chips, if desired.

*Hint: These brownies go amazing with vanilla ice cream!

Two Ingredient Sweet Potato Brownies Recipe

Sweet Potato Brownie Recipe Notes:

As you can see in the photos, I used an oval baking dish, which made it a little more difficult to line it with the parchment. As long as you have most of it covered, that’s perfectly fine. These have a fudgy texture and that just helps lift them out in one piece, so you can cut them easier.

Speaking of fudgy, these are very moist brownies! They’re better eaten the same day, as they will get moister as they sit. They’ll do fine at room temperature, but to firm them up a bit, you can store them in the fridge! I highly recommend an airtight container for storing them.

To dust the powdered sugar, just add a spoonful at a time to a small, fine mesh strainer and gently shake it over the brownies.

You can make this same exact recipe using canned pumpkin. I highly recommend trying that twist the next time you make them and see which version your family members like best! Just swap the can of sweet potato puree with a can of pumpkin and start checking for doneness after 25 minutes!

*if you have someone in your family watching sugar intake, you might consider a brownie mix with less sugar. The fact that this is such an easy snack recipe (ok, dessert recipe!) means that you can continue to adjust it to what works best for your family.

These are a delicious treat and I hope that you find that your family loves them as much as my family does. I don’t even think my kids think twice about that fact that these have sweet potatoes in them. The first time that I made them I was so worried they would find it strange, but they taste so yummy that no one cares! The bottom line is that the I feel like I’m serving more nutritious brownies and I’ve never had one complaint!
