Cajun Chicken Pasta (Lite)
Looking for a lite and easy chicken dinner recipe? While this one has quite a few ingredients, it’s really quite simple and I love it as one of our healthier dinner options.
My family loves the cajun kick of this Cajun Chicken Pasta recipe and I love that it’s a meal that I can put together easily and it’s also very filling.
Another thing that we love about this recipe is that it tastes like something you might order in a restaurant, so a little fancier than some of our dinner options. As you make it more and more, you can improvise ingredients based on what you have on hand.
Ingredients for making Cajun Chicken Pasta
12 ounces uncooked linguine
1 pound chicken breast, cut into thin strips
2 tsp Cajun seasoning
garlic powder
1 TBS olive oil
8 oz fresh white mushrooms, sliced
1 small red onion, sliced
1 medium red bell pepper, sliced
2 medium tomatoes, diced
1 medium yellow bell pepper, sliced
1 cup fat free chicken broth
1/3 cup skim milk
1 TBS flour
4 ounces light cream cheese
black pepper
2 scallions, chopped
How to make Lite Cajun Chicken Pasta
In a small blender combine milk, flour and cream cheese. Set aside.
Cook pasta according to package directions.
Season chicken with Cajun seasoning and garlic powder.
In the Skillet
In a large nonstick skillet add 1 TBS oil and heat over medium-high heat.
Add the chicken and cook 5-6 minutes or until chicken is cooked through. Set Aside.
Next, add remaining olive oil to the skillet and reduce to medium heat.
Then add peppers and onions to the skillet and cook for 3-4 minutes.
Next add mushrooms and tomatoes and cook another 3-4 minutes or until vegetables are tender.
Reduce heat to medium-low.
Add Chicken Broth
Add chicken broth and cream cheese mixture and cook another 2 minutes, stirring frequently.
Next, add the chicken to skillet adjust pepper and Cajun seasoning to taste. Cook one more heat the chicken.
In the pot you used to cook the linguine, add the pasta back into the pot (without the cooking water), and then pour the vegetables, sauce, and chicken into that large pot.
Using a large wooden spoon, mix to distribute the sauce through to the linguine, vegetables, and chicken.
Serve immediately.
