Oven Roasted Potatoes and Onions

This oven roasted Potatoes and Onions recipe is SO easy and it fits with so many meals, and even looks much fancier than it really is! My kids love these spuds and onions (Hey! I’m an Idaho girl raising Idaho kiddos!) with just about any main course and I love that this is a dish that I can make to go along with something simple grilled on the BBQ or we can serve this up next to a fancy ham for Sunday dinner. Very versatile, but always easy!

Oven Roasted Potatoes and Onions
Ingredients:
- 28 ounces baby gold potatoes
- 1 large onion
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon dried thyme
- Sliced green onion, optional
Instructions:
Preheat your oven to 450°.
Spray a large, non-stick baking pan with non-stick cooking spray.
Wash and dry the potatoes and slice them in half.
Wash and dry the onion, slice it in half, and then cut into 1/4-inch slices.
Add all of the ingredients to a large bowl, except the green onion. Toss to evenly coat the potatoes and onions with the olive oil and seasonings.
Place the potatoes on your prepared baking pan in a single layer, flesh side down.
Sprinkle the onions on top of the potatoes.
Bake for 15 minutes, without stirring.
After 15 minutes, check the bottom of the potatoes to see if they’re browned. If they are, you can go ahead and stir the potatoes and the onions. If not, let them cook a few minutes longer or until browned. You want a nice, caramelized crust on the flesh side of the potato.
Turn the heat down to 375 and continue cooking until the potatoes are fork tender, which should take approximately 15 to 20 more minutes. Be sure to stir the potatoes and onions every 5 to 7 minutes.
Remove from the oven and add salt and pepper to your liking.
Serve with green onions sprinkled on top, if desired.
Notes:
This is a quick and easy, no fuss method of making potatoes! You can get the potatoes cooking in the oven while you get other things done.
This will work with any kind of potato, but you may have to adjust the cooking times if you use larger ones.
You can also play around with different kinds of herbs. Rosemary would be delicious, and sometimes we even sprinkle on some Parmesan!
If you’re in a hurry, you can just toss everything right on the baking pan instead of dirtying a bowl. That said, spraying the pan with non-stick cooking spray ensures your potatoes don’t stick 😉
