Breakfast PopOvers…

Speaking of saving money, time is also something that we all seem short on…so I thought I would share one of our favorite breakfasts that is a) REALLY easy b) YUMmmmy and c) actually somewhat healthy. We call these Breakfast PopOvers. I literally blend them up in the mixer and pour them into muffin tins ~ go take a quick shower ~ come back and they are done!

Ingredients:
1 cup flour
4 eggs (sometimes I remove 2 yolks)
1 cup milk
2 tablespoons melted butter
2 teaspoons vanilla
2 teaspoons sugar
Preheat the oven to 450F ~ blend the above in a blender. Spray muffin tins with oil, fill 1/2 way ~ put in oven for about 12 minutes on middle rack. We top these with home canned peaches ~ blueberries ~ applesauce, syrup, powdered sugar… whatever you like! This recipe makes 15.
