Mini Fresh Strawberry Pies
Looking for a sweet little dessert that you can make for your family this week?
These mini fresh Strawberry pies are made in mini pie plates so that each member of the family can have their own special serving!
My kids love to help me make these little pies!
I usually let them each make their own, and it’s a great way to spend time together in the garden and the kitchen, as we pick the berries right from our garden.
If you don’t have fresh strawberries, you can make these strawberry pies with thawed frozen berries, but they might not be as crisp.
Making Fresh Strawberry Pies
Ingredients For Pie Crust:
- 1 stick butter, cubed and cold
- 1-1/3 cup flour
- 1 teaspoon sugar
- 2-3 Tablespoons water
Using a food processor, add flour, sugar and butter.
Process for about 30 seconds or until butter is combined with flour. Add 2 tablespoons of water and process for 30 seconds.
If necessary add additional water, 1 tablespoon at a time until a dough forms. How do you know if your dough is ready? It starts to stick together an form a lump in the food processor and you can hear the food processor struggle to mix. Remove from pan and divide into thirds.
Roll each section to 1/4″ thickness and place in the bottom of the pie plate.

For the mini pie plates, Amazon has a great selection. If you are making these for a big group, these disposable pie tins (in lots of up to 250!) are a great option. They are on the smaller side, and a bit flimsy, but will do the job. I prefer the 5″ pie plates and actually, this set of 10 glass pie plates is my favorite wedding gift to give right now, as these come in SO handy and are the perfect size, especially for parties!
After placing dough in pie tin, trim excess and you will have enough to make a decorative top for your pie crust. Set aside in a plastic bag until ready to use/add the top crust. Repeat for the other two pies.
Pie Filling Ingredients for making fresh strawberry pie
- 3 cups strawberries, cleaned, washed and stems removed.
- 1 cup white sugar
- 1/4 cup corn starch
- 1 tablespoon melted butter
Mix sugar and cornstarch together in a bowl. Add berries and mix well. If the mixture is dry, let is set for a few minutes. If the berries don’t make a liquid mix, squish a few to create juice.
Pour into prepared pie crusts and top with crust. Brush top crust with melted butter.

Bake at 375 for 30-35 minutes or until golden brown on the top.
