Looking for healthy meal ideas? I’m on a mission to eat better and grain bowls are my new favorite!

We’ve been blessed with bountiful blueberry plants again this summer so I’m looking to fit them into every meal that I can!

This Blueberry and Bacon Grain Bowl is SO yummy and so easy to make! And here’s what I love most about grain bowls.

They are so yummy chilled and they make such an easy grab and go lunch.

Ingredients for making this grain bowl

1 cup cooked quinoa
handful of fresh asparagus, I really like the super thin asparagus if you can find it!
crispy bacon
jumbo blueberries (if you can find them)
*frozen will work but honestly, not nearly as amazing
Himalayan or sea salt
micro greens
1 teaspoon avocado or olive oil

How to make a blueberry and bacon grain bowl

Heat the oil in a large nonstick pan
Wash and trim the ends off of the asparagus (I cut them down to about 4 inches long).
Sauté the asparagus in the oil and sprinkle on some of the salt.
Just before the asparagus is done toss in the cooked quinoa and bacon to heat and crisp again.
Spoon the quinoa into your bowl and then add the asparagus around the edge.
Line one side with blueberries and then another row with the crispy bacon.
Sprinkle with a dash more of the quality salt and then micro greens.

This is super tasty right away or should sit well if you made it a day or two ahead of time (cover and chill in the fridge until you’re ready to enjoy it).

If you are looking to change it up a little, you might try adding different things. I personally love this bowl with strawberries too, but my hubby doesn’t like that at all. If you have family members with different tastes then you can always make the base and let each person add to their grain bowl as they desire.
