No Bake Energy Bites

Looking for a snack you don’t have to spend alot of time making but is healthy and will give you the burst of energy you are looking for? Here’s a recipe for No Bake Energy Bites! To make them you need:
  • 1 cup (dry) oatmeal
  • 1 cup toasted coconut flakes
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tsp. vanilla

Hi, I’m Merissa and I blog over at LittleHouseLiving.com. We talk about homesteading, simple living, and best of all….food. A few years ago we started cutting all processed foods out of our diet and now eat only “real foods”. Once you start cutting out certain store foods there are definately some things you miss. For me, one of the worst things was bakery fresh bagels. I loved to pick these up at our local bagel shop on Saturday mornings out garage saling. So determined to stick to my convictions of eating real food I created a recipe to mimic my favorite Chocolate Chip Bagels from the bake shop — but from scratch! Here’s my recipe:

What you need:

  • 1 1/3 c. warm water
  • 1 T oil
  • 4 c. bread flour
  • 4 t. sugar
  • 1 t. salt
  • 1 1/2 t. yeast

Mix all ingredients together in the order listed in a bread machine. Run on the “Dough” cycle. Once the dough is finished, let it cool for a while then punch it down and add chocolate chips. Add as many or as few as you like! Knead the chocolate chips into the dough as well as you can. Separate the dough into 10 balls. Form each ball into a bagel shape with a large hole in the middle. Place these on a greased cookie sheet and let them rise for about 30 minutes.

Once they’ve risen, boil a pot full of water (with a pinch of sugar).While the water is heating up, turn on your oven broiler. Place the bagels into the oven and let them broil for about 2 minutes, flip a broil the other side for 2 minutes. Be careful to watch them on this step so they don’t burn.

Drop the bagels into the now boiling water and let them cook for a minute, flip and let the other side boil for a minute. Place the bagels on a drying rack and let them drip off for a minute before you put them back in the oven at 350F for 20 to 25 minutes.

Microwaved Potato Chips

Making your own Potato Chips at home is easy than you think. You can even make them in the microwave! Plus by making them at home you are avoiding all the added fats from them being fried. Here’s a recipe to try:

  • 1 or more potatoes or other root vegetable, scrubbed clean
  • Salt and other seasonings, optional
  • Olive oil, optional
  • Mandoline
  • Bowl of cold water
  • Microwave-safe plate
  • Paper towels

Chocolate Eclairs

These Chocolate Eclairs are making my mouth water by just looking at them! To make them you need:

CHOUX PASTRY:

  • 1/2 cup butter
  • 1 cup water
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs

CUSTARD FILLING:

  • 1 (4 serving size) package instant vanilla pudding mix
  • 2 cups milk (or as called for on pudding package)
  • 1 cup heavy cream
  • 1/4 cup icing sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

CHOCOLATE ICING:

  • 2 oz semisweet chocolate (or 1/3 cup semisweet chocolate chips)
  • 2 Tbsp butter
  • 1 cup icing sugar
  • 1 tsp vanilla extract
  • 3 Tbsp hot water

Mini Pineapple Upside Down Cakes

These would be a fun individualized dessert to make and so easy…you just make them in a muffin tin! You’ll need:

  • 2 eggs
  • 2/3 C white sugar
  • 4 T pineapple juice
  • 2/3 C all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 stick butter
  • 2/3 C brown sugar
  • 1-can pineapple rings
  • 6-maraschino cherries

Vanilla Pudding Cinnamon Rolls

These Vanilla Pudding Cinnamon Rolls look to die for! It looks like you can also put them in the freezer for another time. To make them you need:
Rolls:

  • ½ cup warm water
  • 2 tablespoons active dry yeast
  • 2 tablespoons sugar
  • 3 ½ ounce package instant vanilla pudding
  • ½ cup butter, melted
  • 2 eggs
  • 1 teaspoon salt
  • 6+ cups flour

Filling:

  • 1 cup butter, softened to room temperature
  • 2 cups brown sugar
  • 4 teaspoons cinnamon

Frosting:

  • 8 ounces cream cheese
  • ½ cup butter, softened to room temperature
  • 1 teaspoon vanilla
  • 3 cups confectioner’s sugar
  • 2-3 tablespoons milk

Did you all enjoy your Easter? Do you have lots of leftovers like we do?

If you are anything like me, we sometimes get stuck in a leftover rut. This Ham and Potato Casserole is a new twist on the classic Ham and Scalloped Potatoes. It goes together really quickly and can even be made ahead of time, covered and stored in the refrigerator or even frozen for an easy dinner when time is short.

The holidays are some of my favorite times of the year. Not only because of getting together with friends and family, but also the food that comes along with it. It’s also a great opportunity to stock up on seasonally priced meat. Ham and turkey are always a good choice and can generally be found at greatly reduced prices before and after the holidays.

Casserole’s are terrific budget and time savers, offering the best of both makes them a staple in many recipe boxes. We have enjoyed this casserole for breakfast, a large brunch, dinner and even as a hearty lunch.

Ham and Potato Casserole

Ingredients

  • 2 cups diced ham
  • 1 medium onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups bag frozen hash browns, shredded and thawed – we bought a 30 oz bag and used about 2/3 of the bag
  • 3 1/2 cups shredded cheese blend
  • 1 1/2 cups {12 oz} Cottage Cheese

Directions

  1. Preheat oven to 350 degrees
  2. Saute onion in a little butter on the stovetop
  3. In a large bowl, combine all the ingredients
  4. Transfer to a 13×9 baking dish
  5. Bake uncovered for 40-60 minutes or until a knife inserted near the center comes out clean {this is a wide range of time, every oven cooks differently, keep an eye on it}

This recipe is a great way to use up some leftover Easter Ham, but you can certainly use sausage or bacon. It will serve about 6 people, depending on how large the servings are and the other dishes you serve along side.
