Wait, what!? That’s right … cheesecake and poke cake all in ONE cake!

What is poke cake and what makes it so delicious?

Poke cake is just what it sounds like. The process of poking holes in a cake after you bake it and the pouring a liquid down those holes to infuse flavor and moisture throughout the cake.

It’s brilliant and whoever thought of it was truly brilliant. 

My kids love to help me make poke cakes because: poking. See? Poke cakes are fun all around!

Ingredients for making EASY Raspberry Cheesecake Poke Cake Recipe

1 (18.25 ounce) package white cake mix, prepared to package instructions

A package (3 ounce) of raspberry gelatin

1 cup boiling water (for gelatin)

2 (8-ounce) packages cream cheese

½ cup powdered sugar

2 tablespoons milk

8 ounces whipped topping, thawed

1-2 cups raspberries

Directions for making EASY Raspberry Cheesecake Poke Cake Recipe

1. Bake cake in 13×9 pan according to package instructions. Allow to cool.

2. Using a fork, poke holes in the top of the cake.

3. Mix together the raspberry gelatin with 1 cup of boiling water until dissolved, and then spoon each color gelatin over the cake, making sure to pour over the holes. T It’s good to spoon over each row 2-3 times for good coverage.

4. Next, mix together cream cheese and powdered sugar with 2 tablespoons of milk. Spread out cream cheese mixture over the cake.

5. Top with whipped cream, spread out over the cream cheese layer.

6. Finally, top the whipped cream with raspberries.

7. Chill for 4 hours before serving.

If you get adventurous, you could even try this with other berries, although I’ve found raspberries to be our favorite for this one. Strawberries are a pretty close second, and very similar and if you try that, you’ll want to switch to a strawberry gelatin.

  3. This is from your instructions:
    *½ cup powdered sugar, divided*
    But in your poke recipes utilizing cream cheese you only list mixing the powdered sugar with the cream cheese.
    Why are you saying to divide the powdered sugar?

  4. Hi – and sorry, that is a typo. Thank you for catching that! I believe I was using a template from a similar recipe, and didn’t adjust it. It should just be 1/2 cup 🙂
