Chocolate Cranberry Brownies
Move over pumpkin pie!
These Chocolate Cranberry Brownies are the perfect dessert for your holiday meal!
I say that every great meal deserves to be completed with chocolate, and this dessert is the perfect one to do the job. Sweet and tangy, with a hint of coffee, this yummy treat will not disappoint.
It is as delicious as it is lovely and let me tell you, the fragrance that it will fill your home with will help to create the perfect ending to end a wonderful day!
Chocolate Cranberry Brownies
Ingredients for Chocolate Cranberry Brownies
2 cups dark chocolate chips, divided
4-ounces butter
3/4 teaspoon coffee granules
1 teaspoon vanilla extract
2 eggs
1 tablespoon cocoa powder
1/4 teaspoon salt
2/3 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup fresh cranberries
Instructions
Preheat your oven to 350 degrees F. Spray an 8×8″ baking dish with non-stick cooking spray. **see note
Add the flour, salt and cocoa to a small bowl and whisk to combine. Set aside.
Add the chocolate chips and butter to a larger bowl and place in the microwave for one minute, stirring every 15 to 20 seconds. Depending on how strong your microwave is, you may not need to cook this for a full minute. You want the chocolate melted but not blazing hot.
Add both sugars and whisk to combine.
Add the coffee, vanilla and eggs and whisk and until smooth.
Sprinkle the flour mixture and most of the cranberries and remaining chocolate chips over the melted chocolate. (reserve a few cranberries and chocolate chips for the top). Using a spatula, fold the ingredients from the bottom to the top. Continue folding until you don’t see any more dry bits of flour, but be careful to not overmix the batter.
Pour the batter into your prepared baking dish and sprinkle the remaining chocolate chips and cranberries on top.
Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
Place the pan on a rack to cool for 15 minutes before serving.
To serve, you can lightly sprinkle some powdered sugar on top, if desired.
Notes:
If you’re using a square pan, I suggest lining it with parchment paper after you spray it. This will help you remove the brownies more easily.
