Easy Homemade Blueberry Puff Pastry Recipe

If you are looking for a homemade puff pastry recipe that just about anyone can make, this is it!

My go-to pastry for breakfast treats is usually cinnamon rolls, so this yummy flaky pastry recipe is a fun (and fancy!) but easy treat that my family loves. And, these aren’t just for breakfast!

My family loves this easy blueberry puff pastry recipe as a dessert option as well!

Ingredients for Easy Homemade Blueberry Puff Pastry Recipe

  • Blueberries
  • Sugar
  • Cornstarch
  • Lemon juice
  • Cinnamon
  • Salt
  • Frozen puff pastry, thawed (we prefer Trader Joe’s Puff Pastry)
  • Butter
  • Egg
  • A little flour for work surface
  • Powdered sugar, for sprinkling

*Trader Joe’s Puff Pastry is a frozen puff pastry that also tends to be a seasonal item, so stock up on it when you find it. It’s easy to store all year because it’s a item that stores well in the freezer. Classic puff pastry will work just fine if you don’t have the Trader Joe’s option, or you could even use a frozen pie crust, although I don’t find that option as good as a traditional puff pastry. I’ve not tried a homemade puff pastry dough recipe, but do know that there are some good ones out there if you are feeling overly adventurous.

This is one of my favorite easy puff pastry recipes – I try to keep the ingredients on my grocery store shopping list so that I have them on hand when I need a quick breakfast or dessert treat!

How to Make these Blueberry Puff Pastries

1. Preheat oven temperature to 425F. In a medium sized bowl, mix together blueberries, cornstarch, sugar, lemon juice, cinnamon and salt. Use a rolling pin to roll the chilled puff pastry sheet out on a floured cutting board or work surface and use a pastry cutter or sharp knife cut into squares. (a pizza cutter works great too!)

*If you are using a full package, you should end up with 8 squares, 4 per sheet of puff pastry. Place the cut pastry squares on to a parchment lined baking sheet.

2. Place a generous amount of the blueberry mixture in the middle of each pasty square. Fold the edges into the middle and pinch the dough together.

3. Melt the butter. Beat the egg and mix the beaten egg with the melted butter to create an egg wash. Use a pastry brush to brush the top and sides of the dough with some beaten egg and butter mixture. Sprinkle the moist area with sugar.

4. Bake for 20 minutes, or until bubbly and golden brown. Serve warm, with whipped cream, ice cream and/or top with powdered sugar.

For savory twists, consider adding a spread of cream cheese under your blueberry topping in each sheet of dough. Other ingredient ideas if you are looking for puff pastry recipe options: brown sugar, heavy cream, bananas or even additional berries – raspberries mixed with blueberries are divine!

Great recipes like this are perfect for quick dessert or breakfast options for a special occasion but they also make a wonderful treat for weekends. I almost always have sheets of puff pastry in the freezer, there are so many wonderful things that you can make with frozen dough and pie dough. I love having it on hand for that reason.
