Gluten Free and Keto Sandwich Bread Recipe

Over the years, I’ve shared several of our favorite homemade bread recipes. Homemade bread is one of my very favorite things to make and my Quick Beer Bread recipe is one of the most popular recipes on my blog. 

I have a dear friend who recently changed her died to gluten-free AND keto, so in an attempt to meet her dietary needs we tried and tested several different bread recipe options before perfecting this one. 

I wouldn’t call this an easy recipe, but it’s also very do-able and honestly, worth the work if you are needing a yummy bread that meets all of your dietary marks when it comes to eating keto.

Gluten Free Keto Bread Recipe make with Psyllium Husk

The ingredients in this homemade bread recipe are the key factors to a successful finished loaf, and I’ve added some notes at the bottom in case you are needing substitutions. 

This definitely doesn’t make the prettiest bread loaf I’ve ever seen, but it smells and tastes amazing, and that’s really the whole point, right? 

Ingredients for making gluten-free and keto bread

2 Tsp dry yeast

2 Tsp inulin or maple syrup

½ Cup water

1 ½ Cup almond flour

1 Cup flaxseed meal

3 Tbsp psyllium husk

3 Tsp baking powder

1 Tsp salt

1 Egg

3 Egg whites

1 Tbsp vinegar

¼ Cup ghee, melted

⅓ Cup full fat sour cream

How to make Gluten Free Keto Bread

Place all the ingredients in a bowl. Beat at medium-high speed for 5 minutes.

Lining Bread Pan with Parchment Paper before Baking

Place parchment paper in bread pan before baking

Line a baking pan with parchment paper. Transfer the dough to the prepared pan and with the help of a spatula even out the top.

Cover with a cloth and let it rise in a warm spot for 1 hour. 

Meanwhile preheat the oven to 350 degrees. Take the pan to the oven and bake for 45 to 50 minutes or until done.

Let it cool down completely before slicing.

Notes for making this gluten-free and keto friendly bread :

Psyllium husk is a total MUST it won’t rise if you don’t add it. You can sub it with flaxseed meal but keep in mind it would be more dense. 

You can use ghee, butter or coconut oil. All three of them will work just as well!

You can also sub the full fat sour cream with Greek yogurt or for coconut cream + 1 Tbsp apple cider vinegar.

Gluten Free and Keto Sandwich Bread Recipe

Both Gluten-free and Keto friendly, this Keto Sandwich Bread Recipe makes for a delicious loaf of bread that is healthy and delicious. Obviously this loaf doesn't rise quite like other bread recipes, but the result is an amazingly yummy bread that also serves well as a breakfast toast.

Ingredients
