Sweet Corn Salsa Recipe
This is one of our favorite recipes, Sweet Corn Salsa (also known in some circles as Cowboy Caviar) is made with fresh things that can be collected right from your garden!
It’s the perfect summer appetizer and really easy to put together quickly!
Ingredients for Sweet Corn Salsa
3 cobs of sweet corn (cut corn right off cob)
4 tomatoes, diced (I prefer Roma)
1/2 onion, chopped
14.5 ounce can of black beans, drained and rinsed
Juice of 1 lime
1/2 cup cilantro, chopped
Salt & pepper, to taste
How to make Sweet Corn Salsa
Cut corn off the cobs. Mix together with diced tomatoes, onions, black beans, cilantro and juice of the lime.
How to make Cowboy Caviar with Sweet Corn
If you are going for more of a Cowboy Caviar type salsa, add in some black eyed peas and 1/4 cup sugar and 1/4 cup white wine vinegar. I bounce back and forth between these two variations of this sweet corn salsa. The Cowboy Caviar version is a bit more liquidy but always a hit. I also tend to use red onion if I’m going to make the cowboy salsa version.
I’m a huge fan of easy recipes, this is one definitely gets made a lot around here.
You can spice this recipe up by adding diced jalapenos too. The more you make it, the more comfortable you will be experimenting with different options. Often, I base the way I make it on what I have growing in the garden and the salsa ingredients that I have on hand.
This is a great party dip or appetizer to bring to events as well as it is very affordable to make and you can feed a lot of people with this one.

One of our favorites, this sweet corn salsa with black beans recipe is one of our go-to appetizers for summer. Super easy to make, just a few ingredients - many from the garden! You can also easily turn this one into a cowboy caviar salsa as well!
Ingredients
