Chicken Parmigiana as Served on Carnival Cruise Line

On Carnival Cruise ships they call this dish Chicken Parmigiana. It’s served in Carnival’s Cucina del Capitano restaurant and it’s one of the ship’s most popular dishes. We call it delicious, and we also call it Chicken Parmesan. Either way, it’s fantastic and I’m so excited to get to share this recipe with you!! 

My son has been begging me to try something like this ever since we tried it aboard one of our recent cruises with Carnival. 

I’m excited to see how easy this looks and thanks to our friends at Carnival Cruise Line, I’m excited to share it with you today! It actually looks really doable! 

Chicken Parmigiana Ingredients: 

Chicken Breasts / Chicken Cutlets
Olive Oil
Garlic Cloves
Panko Italian Breadcrumbs
Eggs
Flour
Whole Mozzarella

San Marzano Tomato Sauce Ingredients: 

San Marzano Tomato Sauce
Garlic Cloves (sliced)
Olive Oil
Salt to Taste
Red Crush Pepper to Taste
Fresh Basil Fried Basil for Garnish

Parmesan Crumble Ingredients: 

Parmesan Cheese
Cubed Butter
High Gluten Flour
Salt and Black Pepper to taste

How to make this Pollo Parmigiana Della Cucina

1. Trim & clean chicken breast, pound it till it is flat using steak hammer or meat mallet, make sure shape is retained

2. Marinate breast with oil, hand crushed whole garlic, thyme, salt & pepper

3. In a shallow bowl, dip chicken breast in beaten egg mixture & crumb with Panko breadcrumb mixture

4. In a large frying pan or large skillet over medium heat in olive oil along with spring of rosemary sprig and hand crushed garlic until chicken is cooked & get a nice golden color from all sides

5. Top skinless chicken breasts with tomato sauce. Place slice of whole mozzarella cheese. Gratinate in the salamander (broiler) until cheese melts San Marzano Tomato Sauce

6. In a hot Sauce pan using olive oil sauté garlic, red crush pepper and can marzano tomato, stir continuously. Cook for 30 minutes and finish with salt, pepper, olive oil and little sugar if required. Sauce should be very light in constituency.

How to make the Parmesan Crumble:

7. Add grated Parmesan, butter, high gluten flour and salt to a blender. Blend well then pass through a fine sieve. Scatter across a baking tray and bake for 240°F for 8 minutes or till crisp and light golden brown in color. When cold break it into crumble and store in airtight container.

Finishing & Presentation of this Chicken Parmesan

8. Top the San Marzano sauce over the top of the chicken and then thinly slices of whole mozzarella and gratinate, as soon as it is taken out of the salamander sprinkle with chopped parsley and chili flakes.

9. Pour out cherry tomato sauce at the base and place chicken parmigiana on the center of the plate.

This is the best chicken parmesan we’ve tried and I love that we can now make it at home. We love to cook chicken, but I feel like I run out of ideas. I usually keep boneless skinless chicken breast halves on hand, so this has been an easy chicken recipe to go when I need to get a meal on the table.

The best part is that it’s a meal that comes together easily but tastes like we are dining at an Italian restaurant. I’ve never had a great homemade marinara sauce recipe, but this San Marzano Tomato Sauce mixture is perfect. Combined with the bread crumb mixture (and Italian seasoning) this recipe has allowed me to prepare what feels like an authentic dish, right in my own kitchen.

My son calls this the perfect chicken parm – and while I know we’d rather be enjoying it while aboard a cruise ship – it’s definitely a dinner that everyone in my family loves.

Chicken Parmesan fans are going to go crazy for this! Thanks to our friends at Carnival Cruise LInes, I'm able to share their exclusive recipe for their popular Chicken Parm dish: Chicken Parmigiana just like they serve on our favorite Carnival ships in Carnival’s Cucina del Capitano restaurant!

Ingredients

Chicken Parmigiana Ingredients: 

  • 10 Chicken Breasts
  • 2oz Olive Oil
  • 5 Garlic Cloves
  • 2lb Panko Bread Crumbs
  • 6 Eggs
  • 6oz Flour
  • 0.5lb Whole Mozzarella

San Marzano Tomato Sauce Ingredients: 

  • 1 can of San Marzano Tomato Sauce
  • 5 Garlic Cloves (sliced)
  • 4oz Olive Oil
  • Salt to Taste

  • 0.25 Fresh Basil Fried Basil for Garnish

  • 4.4oz Cubed Butter
  • 5.3oz High Gluten Flour
