Spicy Chicken Stir Fry

Chicken recipes tend to be my go-to for busy family nights, and this Spicy Chicken Stir Fry recipe is definitely one of them.
 
You might have seen my popular Easy Chicken Stir Fry recipe that I’ve been sharing for years, but this spicy version is one that kicks things up a notch.
 
We call it the grown up version of Chicken Stir Fry and as my kids have gotten older, this one has become a new favorite. 
 
This recipe serves 4 and can easily be modified for larger groups. Quite often, I will double it just so that we have extra leftovers for lunch or dinner the next day. 

Spicy Chicken Stir Fry Recipe

 

Ingredients for Spicy Chicken Stir Fry

  • 1 pound skinless, boneless chicken breasts cut into cubes
  • 1 TBS sesame oil, divided
  • 1 TBS rice vinegar
  • 2 TBS soy sauce
  • 2 tsp sriracha or chili paste
  • 1/2 cup fat-free, low sodium chicken broth
  • 2 tsp cornstarch
  • dash of salt
  • 2 TBS vegetable oil, divided
  • 1 cup snow peas, cut in half
  • 1/2 onion, sliced thickly
  • 1 yellow bell pepper, sliced thickly
  • 1 red bell pepper, sliced thickly
  • 1 TBS fresh ginger, grated (about 1 inch of ginger root)
  • 2 garlic cloves, minced
  • 2 green onions, sliced thinly
  • sesame seeds for garnish

How to make Chicken Stir Fry

1. Whisk 2 teaspoons of sesame oil, rice vinegar, soy sauce, sriracha, chicken broth, cornstarch, and salt in a small bowl and set aside.

2. Heat a large skillet (or wok) over medium-high heat and add 1 tsp sesame oil and 1 TBS vegetable oil. Add chicken and cook, tossing around skillet or wok for 4 minutes. Remove chicken from pan and set aside.

3. Add 1 TBS vegetable oil to skillet and then add the peppers, onions, snow peas, garlic, and ginger and saute for 1 minute. Add the broth mixture and cook for 30 seconds or until the sauce thickens. Return chicken to the skillet and stir fry for 4 more minutes or until chicken is cooked through.

Top stir fry with green onions and sesame seeds. Serve with a side or rice or whatever you prefer. Enjoy!

I think it’s recipes like this that make it into your recipe rotation easily because they become almost a comfort food for the family.

My family asks for this one a lot, so the items are often on my shopping list, and it becomes part of our dinner routine to include this recipe a few times a month.

We usually serve it with rice, and I will triple batch the rice to that we can have a favorite casserole recipe in the same week.

Spicy Chicken Stir Fry

We love chicken recipes around here and this is such a good one! Spicy Chicken Stir Fry is a crowd pleaser and it's also an easy go to for those busy nights when you need dinner on the table quickly!

Ingredients
