Caramel Toffee Poke Cake Recipe

I have to say, they are my go-to for those times when I need to come up with a dessert quick because not only are they super easy, they are a delicious cake recipe that is a crowd pleaser every single time.

This EASY Caramel Poke Cake with Toffee recipe is no exception: super simple, quick and the icing on the cake? (pun intended!) VERY affordable to make! 

EASY Caramel Poke Cake with Toffee Recipe

Ingredients for this Easy Caramel Poke Cake with Toffee

Package of white cake mix, prepared as instructed on package

Caramel syrup

Softened cream cheese

Powdered sugar

Caramel creamer

Whipped topping, thawed

Toffee bits

Additional caramel to drizzle over cake

Frosting a Poke Cake

Directions for making Easy Caramel Poke Cake with Toffee

Bake your cake in a 13×9 baking pan according to the package directions. Let your cake cool at room temperature.

Leaving the cake in the cake pan use the handle of a wooden spoon to poke holes throughout the cooled cake, I like to space them about one inch apart. 

Pour caramel sauce over the cake, making sure to pour over the holes.

Cream together the cream cheese and powdered sugar. Mix in most of the caramel creamer and spread evenly over the top of the cake. 

How to frost poke cake

Top with homemade whipped cream topping or cool whip and toffee bits. Drizzle additional remaining caramel sauce if desired. 

Chill for 4 hours before serving. 

Serves 12-15.

Notes for Making Poke Cake:

Since you will be using the end of a wooden spoon to make the holes in the cake, use a medium sized wooden spoon (you don’t want the holes too big or too small)

Add caramel drizzle right before you serve – you could even use a homemade caramel sauce for this step.

For the toffee pieces we like to use Heath Bits.

I promise you, this is such an easy recipe and it makes the best cake! The beauty of poke cakes is that while they are super easy to make, they always look fancy and the addition of liquid down in the cake also ensures that they are not dry. Perfect for birthday parties, this is an easy dessert that is perfect as a birthday cake – and that sweet filling will satisfy and be a huge hit with even the most serious sweet tooth.

They are also a fantastic cake option for special occasion events like bake sales and fundraisers or cake walks. In fact, at the last school carnival we attended – all of the poke cakes were the first to go! 

It’s easy to keep the ingredients for poke cakes on hand, since all you really need is a box cake and whip topping, along with whatever you decide to pour in the pokes!

Ingredients

  • 1 (18.25 ounce) package of white cake mix, prepared as instructed on package
  • 3/4 cup caramel syrup
  • 2 (8-ounce) packaged of softened cream cheese
  • 1/2 cup powdered sugar
  • 2 tablespoons caramel creamer
  • 8 ounces whipped topping, thawed
  • 1/4 cup toffee bits
  • Additional caramel to drizzle over cake

Instructions

  1. Bake your cake in a 13x9 baking pan according to the instructions on the packaging. Let your cake cool. Next, use the end of a wooden spoon to poke holes throughout the cake, I like to space them about one inch apart.

  3. Cream together the cream cheese and powdered sugar. Mix in the caramel creamer and spread evenly over cake. 
  4. Top with whipped topping and toffee bits. Drizzle additional caramel if desired. Chill for 4 hours before serving.
