These EASY Buffalo Cauliflower Tacos are SO yummy and a great way to make a meat free meal!

Buffalo Cauliflower Tacos

I’ve recently discovered the magic of baked cauliflower and these super EASY Buffalo Cauliflower Tacos are a great way to experience all of the flavor and deliciousness of this combination! A light meal, it’s actually very filling and this is a taco recipe that also works wonderfully as an appetizer or even as a tailgating or party option.

If you are a fan of buffalo sauce (I’m currently obsessed!) then this recipe is a great way to incorporate it into your meal or appetizer planning.

Ingredients

4 cups of washed and cut cauliflower florets
2 tablespoons olive oil or avocado oil
pinch of quality salt
1 tablespoon nutritional yeast
½ cup buffalo sauce

Like all taco recipes, this is one that you can switch up as you see fit and based on what you have on hand. These cauliflower tacos are also a great option in case you are wanting to offer a meat free option for guests. Here are some things you can use to change these up OR offer different varieties:

Taco options:
corn or wheat tortillas
thinly sliced purple cabbage
mixed spring salad greens
blue cheese dressing or plain Greek yogurt
celery sticks

Instructions

Preheat the oven to 415 degrees.
Drizzle some of the oil on a baking sheet and spread around.
Place the washed and cut cauliflower florets on the tray and pour the rest of the oil on top, sprinkle with a dash of salt.
Roast for about 20 to 30 minutes, the size of the florets will make a difference in the amount of time needed. You’ll want them to be fork tender without completely falling apart and a golden brown. Stirring a few times while roasting will help with even cooking and browning.

While the cauliflower is roasting you can prep your other vegetables and tortillas.
When done, transfer the roasted cauliflower into a dish and mix in the nutritional yeast and buffalo sauce until fully coated.

Pile the buffalo cauliflower onto your veggie loaded tortillas and enjoy!
