Protein Peanut Butter Jelly Energy Bites

It’s peanut butter energy bites time! and (don’t forget the jelly!!) 

Imagine that delicious gooey flavor combo that you loved as a kid rolled up into a tasty ball. Loaded up with protein and omega-3’s for a treat that is as healthy as it is yummy for moms and kids alike. (Protein powder is optional and I usually leave that out if I’m just making these for a snack) 

These Protein Peanut Butter Jelly Energy Bites are a great treat midday or to kick off your morning, and give you the boost you need.

They are sweetened with just the natural sugars in the preserves and are the perfect combination of sweet and salty!

We LOVE this easy energy balls recipe because not only is it no-bake but the addition of peanut butter and jelly makes this a great protein source for sports!

These are a version of our favorite chocolate peanut butter no-bake energy balls and both are fantastic recipes for teens and tweens who enjoy spending time in the kitchen.

My daughter loves these to take with her to her long dance days and I love that they are no-bake so I don’t have to worry about her making them on her own. 

Ingredients for PB&J Energy Bites

1 cup old fashioned oats

½ cup natural peanut butter

2 scoops vanilla protein powder (optional) 

2  heaping T. ground flax seed

3 T. sugar free preserves

1 tsp. Vanilla extract

 

How to make Peanut Butter Energy Bites (with jelly!) 

Line baking sheet with waxed paper.

Combine oats, peanut butter, protein powder, flax seed, and vanilla extract in a large bowl until mixed well.

Add preserves and gently fold into oatmeal mixture.

Scoop up mix and roll into balls, you can make them any size but a ping pong ball is a nice size to make them for snacks or a as a breakfast treat.

Place balls on waxed paper and put into freezer for an hour.

Transfer to a container with a lid and store in the fridge.

These will keep nicely for up to a week.

Make two or three batches and freeze some for hectic mornings or to pack in lunchboxes.

This recipe makes roughly 15 1½” balls.

*Protein powder is optional - I usually only add if I'm looking for added energy / kick
