Not the prettiest dish, but trust me! This Taco Pasta recipe will become a go-to favorite for quick and easy dinners!

Easy Dinner Idea: Taco Pasta Recipe

 
I have to admit. This Easy Taco Pasta recipe is one that I have put of sharing, because while it’s one of our favorites, it’s just not pretty.
 
In fact, my teenager has named it the ugly dinner, but he happily goes back for 2nd and 3rd helpings, so I can only guess that this nickname has been given with love.
 

Ingredients for Taco Pasta

  • 1 lb. of Lean Hamburger
  • 1 box of Shell Pasta 
  • 1 can of Whole Corn
  • 1 can of Pinto Beans
  • 1 can of Red Kidney Beans
  • 1 can of Ro-Tel
  • 1 packet of Dry Ranch Mix
  • 1 – 1/2 packets of Taco Seasoning (depending on how much flavor you want)
  • 1 and 1/2 8 oz. packages of Cream Cheese
 
 
Step by Step:
  1. Cook hamburger completely,
  2. Cook shell pasta until tender.
  3. In a large pot combine hamburger, pasta, corn, pinto beans, kidney beans, Ro-Tel, ranch mix, and (1) packet of taco mix.
  4. Mix all ingredients together well. 
  5. Soften 8 oz. of cream cheese and stir it in until well blended.
  6. Cook on low heat for an hour or more, the longer the better, stirring often. 
  7. Add in your remaining cream cheese and taco seasoning if you wish. I enjoy a thicker pasta and more flavor, so I did so.)
  8. Mix well until all cream cheese is melted.
  9. Serve and enjoy! 

 

I’m telling you, it’s not the prettiest dish on the block, but it makes for a hearty and delicious meal.

My family loves it and I tend to grab all ingredients for this one each time I am at the grocery store (especially if I see any of them on sale) because it’s one of those recipes that I can make in a pinch and still know that everyone will be excited about dinner.

My kids love to hear the words Taco Pasta!! *it’s also a great recipe for kids who are just learning to cook, both of my kids enjoy making this one!
