Fourth of July Dessert: Red, White and Blue Poke Cake

Poke cakes are a favorite around there and this red, white and blue poke cake is the perfect patriotic dessert for Memorial Day weekend as well as the 4th of July.

Fourth of July Dessert: Red, White and Blue Poke Cake

This red, white and blue poke cake is one of my daughter’s favorites to make, and it’s always a party favorite.

Obviously this is a recipe that can be made all year long and you can switch up the colors based on your party theme or season.

The double layer of frosting is also optional, but a fun touch, especially with the patriotic colors of this cake.

Ingredients for making Patriotic Poke Cake

1 (18.25 ounce) package white cake mix, prepared to package instructions

1 package (3 ounce) package strawberry gelatin, divided when prepared with 1 cup boiling water

1 package (3 ounce) package berry blue gelatin, divided when prepared with 1 cup boiling water

2 cups boiling water (for gelatin)

2 (8-ounce) packages cream cheese

½ cup powdered sugar, divided

8 ounces whipped topping, thawed

Red, white and blue sprinkles

How to make red, white and blue poke cake

1. Bake cake in 13×9 pan according to package instructions. Allow to cool.

2. Using a fork, poke holes in the top of the cake.

3. Mix together the blue and red gelatin each with 1 cup of boiling water until dissolved, and then spoon half of each color gelatin over the cake (reserve the other half), making sure to pour over the holes. The best way to do this is a row of blue, then a row of red and alternate so you get a colorful mix of red and blue in the cake.

4. Next, in two separate bowls, mix together 8 ounces cream cheese, ¼ cup powdered sugar and the remaining gelatin. Red in one bowl and blue in the other. To adjust the color, feel free to add red or blue food coloring to reach the shade you desire. I think that gel food colorings work best.

5. Spread out red cream cheese mixture over the cake, followed by the blue cream cheese mixture. You might place it in the fridge between frostings to make it easier, if needed.

6. Top with whipped topping and red, white and blue sprinkles.

7. Chill for 4 hours before serving.

Serves 12-15
