Cheesy Potato Egg Breakfast Bake

I’m an Idaho girl, and we LOVE our potatoes!

This Cheesy Potato Egg Breakfast Bake is such a great breakfast recipe because it has so few ingredients, is easy to make and it is very hearty and filling!

Another thing that I love about this recipe is that it can be modified depending on the crowd you are serving.

Perfect (and easy!) this Cheesy Potato Egg Breakfast is an awesome way to start the day!

I had doubled (and even tripled it) based on attendance and if you have leftover Cheesy Potato Egg Breakfast Bake it is awesome in breakfast burritos, just spoon into flour tortillas and pop in the microwave, yum!

Ingredients for this cheesy potato bake

3 cups cooked potatoes (I used leftover home fries)
5 large eggs
3 strips thick bacon, cooked and crumbled
1 cup shredded cheddar cheese
Green onion, for garnish


How to make this potato breakfast casserole

Preheat your oven to 375 degrees F.
Spray a shallow baking dish with non-stick cooking spray.
Roughly chop the potatoes and warm them in the microwave or in a pan. They just need to be warmed and not ice cold before you add them to the baking dish.
Add the warmed potatoes to the baking dish and spread them out as evenly as possible.
Sprinkle the cheese over the potatoes followed by the crumbled bacon.

Beat the eggs and drizzle them all around the potatoes, making sure to fill any holes.
Cover with aluminum foil and bake for 30-40 minutes or until the eggs are set in the center.
If you want it to be a little brown on top, you can uncover it halfway through baking. And if you want to melt some cheese over the top, add it in the last 5-10 minutes of baking.
Serve with extra cheese and chopped green onion, if desired.


Notes: This is a great way to use up leftover potatoes, and it’s easily adaptable to your tastes. You can use sausage instead of bacon (or omit the meat altogether). You can also add whatever veggies, herbs or cheese you like! You’ll want to use a baking dish that’s shallow and wide. If it’s too deep, it will take longer for the eggs to set in the middle.
