(makes 24 mini muffins)

Perfect for game day and tailgate parties, this little appetizer is one that everyone enjoys and it’s also easy on the budget.

This mini corn dog sausage bites recipe is great for game day and tailgate parties!

I will often double the batch so that I can put some in a ziploc freezer bag to store away until the next weekend because football season can be long and snacks are always welcome!

Ingredients for making Mini Corn Dog Bites

4 Turkey Pepper Jack Smoked Sausage Links **see pic above
1/2 cup all-purpose flour
1/2 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon onion powder
1/4 cup sour cream
1/4 cup milk
4 tablespoons melted butter
1 egg

This is the Goodcook Muffin Tin pan I use, but this will work with almost any muffin tin pan, obviously size will vary based on what size pan/cups you use. 

How to make Mini Corndogs

Add the flour, cornmeal, sugar, baking powder, baking soda and salt to a large bowl and whisk to combine. Set aside.

In a another large bowl, add the sour cream, milk, melted butter, and egg and whisk until thoroughly combined.

Add the wet ingredients to the dry and stir until just combined. Set aside.

Spray the muffin tins with nonstick cooking spray and add one tablespoon of cornbread batter to each cup.

Cut each sausage link into six 1/2″ pieces and press each one into the center of the cornbread batter.

Bake for 11 to 13 minutes or until the edges of the cornbread are golden brown. Be careful not to over bake for the cornbread will be dry.

Notes and tips for making these corn dog bites

If you were doing this for the first time, I recommend making one test muffin just to be sure you get the baking time right.

I use smoked turkey sausage to keep these a little healthier without sacrificing any flavor, but you could use any kind of sausage you like or even hot dogs. Be sure to get the thinner sausage links. The larger smoked sausage links will be too wide for the mini muffins tins.

I usually use Turkey Pepper Jack Smoked Sausage Links which work great. You can use any kind of sausage – or even hotdog – just make sure you don’t use sausage that is too big/wide or you’ll have a hard time making it fit. (OR you can just cut smaller chunks)

We like to dip these in Dijon mustard, which taste great with the smokiness of the sausage and the slightly sweet cornbread.

This is perfect game-day food. Serve up a big platter of these, and your guests will gobble them up in no time!
