Broccoli, Ham, and Cheese Breakfast Burrito Recipe
Looking for something quick and healthy that will make a filling breakfast? This simple breakfast burrito recipe is sure to be a hit with the whole family!
If you are a parent with kids in sports, this breakfast burrito recipe is also great for those crazy sports weekends. Lot of protein and easy to grab and go. I also like to make these ahead of time, wrap them warm in tin foil and bring them along to share.
Breakfast Burrito Recipe
- 1/3 cup cooked broccoli
- 1/2 cup chopped ham
- 1/4 cup cheddar cheese
- 6 eggs
- salt and pepper
- 4 flour tortillas
Spray a frying pan with cooking spray and add 6 eggs. Whisk eggs and cook on medium heat, stirring constantly until almost cooked. Season with salt and pepper.
Remove from heat and stir in broccoli, ham and cheese and return to heat.
Continue cooking until eggs are set.
Heat flour tortillas for 20 seconds in the microwave. Divide eggs evenly between 4 tortillas and wrap. Serve immediately.
You can get as creative with these as you like. My husband and son love to add jalapeño peppers and hot sauce. If you aren’t a broccoli fan, you can leave those out. I have even added hash browns before, which is also delicious!
