Cinnamon Roll Easy Cookie Bars

This recipe could be considered a bit of an easy cookie bars cheater recipe, but that is only if you consider the fact that the box mix is what makes it so easy.

You still made and baked it with love, right? And, it’s delicious so I don’t think it’s as much of a cheat as it is a wonderful time saver helping you to bake from the stress free heart 🙂

Easy Cinnamon Roll Cookie Bars

Yields: 18-24

Cookie Bar Ingredients

Ingredients for making Cinnamon Roll Bars

Ingredients for Icing:

  • 2 cups powdered sugar
  • 2 tablespoons milk

How to make Cinnamon Roll Bars

1. Preheat oven to 350°. Lightly grease a 9 X 13 baking pan and set aside.

2. In a large mixing bowl add the cake mix, both sugars and the cinnamon. Whisk to combine.

3. In a medium mixing bowl, add the melted butter and two eggs. Whisk until combined.

4. Add the wet ingredients to the dry ingredients and stir until well incorporated.

5. Transfer the cinnamon roll cookie dough to your greased pan and spread it evenly.

6. Bake for 25 minutes or until an inserted toothpick from the middle comes out clean.

7. Cool in the pan, on a wire rack for at least 15 minutes before icing.

Directions for Icing:

1. Add the milk to the powdered sugar in a medium bowl and stir until a thick glaze forms. If the glaze is too thin, add more powdered sugar.

2. Pour the glaze onto the top of the cinnamon bun cookie bars and spread evenly.

3. Cut into squares and serve.

Cinnamon Roll Bars

Easy and so delicious, these cinnamon roll bars are so good and they are made with cake mix so it's an easy recipe hack that makes a wonderful holiday breakfast or dessert idea. My family loves this recipe year round but I especially think it's great during the holidays because it's such a festive recipe and just like Cinnamon rolls but in a cookie bar!

Ingredients

  • 1 (15.25 oz) box Pillsbury Cinnamon Bun Cake Mix
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 eggs
  • 1/2 cup (1 stick) butter, melted
