If you love watermelon and summer salads, then you just might enjoy this Watermelon Arugula Salad. You can make it small (like shown above) for appetizers or make larger portions to serve with a meal. This little salad is not only pretty to look at, it’s so refreshing and wonderful in the summer.
Ingredients:
Watermelon
Arugula Salad
Gorgonzola Cheese (or Blue Cheese works as well, depending on your preference)
Balsamic Vinegar
Fresh Black Pepper (optional)
Candied Walnuts or Pecans (optional)
Directions:
Cut your watermelon into rounds by slicing. You can either serve each salad with a large round watermelon slice (like shown here) or you can use a round cookie cutter (or sharp knife) to cut smaller rounds like shown above.
Add a dollop of gorgonzola cheese (or sprinkle with blue cheese) and then garnish with a few Arugula leaves, a splash of balsamic vinegar and then if you like, grind fresh black pepper over each salad. My kids don’t like the addition of pepper, so my hubby and I usually just do that one our own. Top with candied walnuts or pecans (optional). Adding the candied nuts will definitely sweeten this salad and make it a bit more “desserty”.
I love these types of easy salads for a quick addition to meals or BBQs, and they not only add a fun additional side dish, but they also look lovely on your table setting and are quite affordable. You can change thisWatermelon Arugula Salad up based on the ingredients that you have on hand, and I have even made it before with just the cheese, watermelon and balsamic. I personally also like to add fresh cut red onions, but I do that on the side because my family doesn’t agree with me on that one.
