Oven Roasting Asparagus
Nothing is as delicious in the spring as a simple appetizer or side dish made with a few ingredients and oven roasting asparagus.
The last thing that I want to do as the weather gets warmer is spend a lot of time in the kitchen. Recipes like this Parmesan Oven Roasted Asparagus help to add some healthy and affordable options to our meals and because it is so simple it means less time in the kitchen for mama!
Oven Roasting Asparagus
Ingredients:
- 1 lb Asparagus
- 1/4 cup olive oil (use less if desired)
- 1/2 cup Parmesan Cheese, shredded
- salt and pepper
Directions:
Heat oven to 425. Line a baking sheet with aluminum foil. Wash asparagus and break off the dry ends. Discard ends. Place onto the prepared baking sheet.
Pour olive oil over asparagus.
Use both hands to fold up the short ends of the aluminum foil and “roll” it back and forth to coat the asparagus with olive oil.
Use your fingers to line the asparagus in a single layer. (When you are done, rub that olive oil on the back of your hands to add some amazing moisture). Sprinkle asparagus (not your hands) with salt and pepper.
Bake for 15-20 minutes or until asparagus is tender. Remove from pan and sprinkle with Parmesan cheese.
