Easy Slow Cooker Chicken Taco Soup Recipe

I’m a big fan of easy chicken dinners, especially ones that can be made in the crock pot. This slow cooker chicken taco soup recipe is my go-to for an easy family meal!

That’s a common question around here, and a welcome answer would be my Easy Slow Cooker Chicken Taco Soup recipe!

It’s such an easy meal, but it’s also delicious as well.

Great all year round because it’s a comfort food of sorts, and yet it’s light and includes just a few ingredients that you might even have on hand for last minute meals!

 

Ingredients for Chicken Taco Soup made in the Crock Pot

Ground chicken
Onion, sliced
Niblet Corn
Red chili flakes (optional)
Black Beans
Homemade fresh Salsa (can use store bought, but fresh is much nicer)
Taco Seasoning
Chicken Stock
Salt and pepper
Garish with : Sour cream, shredded cheddar, avocado, tortilla strips, lime wedges

How to make Chicken Taco Soup

Season the chicken with taco seasoning, chili pepper, salt and pepper, and sauté it with the onions just until no more pink is evident.
Transfer to the slow cooker, and add the corn, black beans, salsa and chicken stock. The stock amount is an approximate. Just be sure to cover the ingredients by about ½ inch.
Cook on low for approximately 4 hours.
When serving, squeeze a fresh lime wedge over each bowl of soup and garnish with sour cream your other favorite toppings!

This Slow Cooker Chicken Taco Soup Recipe is one of my winter favorites, the idea comfort food - it's a soup recipe that never disappoints and if you love good chicken soups, this is one for you! A perfect combo of ingredients and toppings make this one of the best soup recipes and definitely one of our favorites!

Ingredients

  • ½ lb. Ground chicken

  4. A dear friend made this soup for me. I have been eating it for about 3 days. Today I tried something different. I switched out the chicken and put some albondigas in it. Absolutely divine! Served it with shredded cheddar cheese, avocado and lime. Can’t be beat!

  5. I used shredded rotisserie chicken and more beans. Really good, not real spicy although you could use a spicy salsa and/or add more taco seasoning, if that’s your thing.
