If you are looking for easy (and kind of fancy looking!) lunch ideas, here is one of my favorites. These Easy Spinach and Feta Crescent Rolls pair perfectly with warm bowl of soup or even a salad, and they literally take minutes to make. They remind me of the kind of lunch that you would order in a fancy little bistro and they area also great for finger food for parties and get togethers. Oh, I did I mention how EASY they are to make?
Spinach & Feta Crescent Rolls
1 8ct. package crescent rolls
2 oz. crumbly feta cheese
2 oz. baby spinach, chopped
salt & pepper to taste
melted butter to brush over the oven fresh crescent rolls
#1. Preheat the oven according to the crescent rolls package directions.
#2. Open the package of crescent rolls and divide the triangles from each other.
#3. Sprinkle the crumbly feta and chopped spinach on each of the crescents. You can always add more and more is better in this case.
#4. Roll the crescents up and bake according to the package directions; typically 13-15 minutes and golden brown.
#5. Remove from the oven and use a pastry brush to spread melted butter over the top of each crescent.
Serve with pizza sauce if you wish. Makes 8 servings.
