With fall right around the corner, I am starting to dig out my favorite fall recipes. We love pumpkin around here, so this Pumpkin Cookie Recipe was at the top of my list of recipes to share with you. I think that sometimes the most simple pumpkin recipes are the best, and this one won’t disappoint!
Best of all? These cookies are easy to make and the cream cheese frosting is amazing!
Pumpkin Cookie Ingredients
1 box of spice cake mix, any brand
1⁄2 C. canned pumpkin
Cream Cheese Frosting Ingredients
1⁄4 C. butter, softened to room temperature
1 tsp. vanilla
2 C. powdered sugar
#1. Preheat your oven to 350 degrees and spray your baking sheets with a nonstick spray.
#2. Combine the cake mix, 2 eggs and canned pumpkin and mix well. Depending on how thick
your dough is you may want to add an additional tablespoon of pumpkin one at a time.
#3. Drop by rounded tablespoon onto your baking sheets about 23” a part.
#4. Bake 9-11 minutes.
Cream Cheese Frosting Directions
In a medium size bowl, blend the softened cream cheese, whipped topping and sugar with a hand mixer.
Frosting will be light and airy. Generously spread the frosting onto the cookies.
Makes approximately 2 dozen cookies. Enjoy!
