Healthy chicken stir fry recipes aren’t the easiest to find, but cooking them at home definitely let’s you control the ingredients. 

As far as stir fry recipes go – this one is about as easy as they come. This tends to be our go-to on those nights when we are tempted to grab take out but this easy to make recipe instead. It makes a delicious weeknight meal and comes together quickly with the combination of these simple ingredients listed below.

Best of all, if you have time to plan ahead, you can cut up the veggies and chicken ahead of time and then put it all together when you’re ready to start cooking. OR, if it ends up being a last minute chicken stir fry meal, it’s the perfect way to get a yummy meal on the table quick and easy!

We like to make this in a wok, but a pan or electric skillet will do the trick as well.

This is a good freezer meal too: Bag up the cut up peppers, onions and chicken (chicken separately) and then defrost and cook when you’re ready to eat. Buy these things when they’re on sale and you’ll save money, too!

Plus it’s delicious. Serve over rice or in a soft taco shell as a fajita. Enjoy!

Easy Chicken Stir Fry

Ingredients for Chicken Stir Fry

  • 1 lb. boneless, skinless chicken, cut into bite-size strips
  • 2 red peppers, cut into strips
  • 2 yellow peppers, cut into strips
  • 1 green pepper, cut into strips
  • 2 onions, sliced
  • 3 tablespoons olive oil or sesame oil, divided
  • 4 tablespoons teriyaki sauce, divided

Optional Chicken Stir Fry Ingredients and Ideas

Optional items you could add to your chicken stir fry: red pepper flakes, green beans, snow peas, fresh ginger, bean sprouts, broccoli florets, sesame seeds, baby corn, green onions, water chestnuts, snap peas … the possibilities are endless! And sometimes if I’m really scrambling to get a stir fry dinner on the table, fresh vegetables or sometimes I’ll just use a frozen vegetable stir fry package from the grocery store to include more vegetables without the extra time it takes to cut them all up. Colorful veggies always make this dish look better, but sometimes time is an issue so it’s a great way to get different vegetables into easy dinners like this!

Directions for making Chicken Stir Fry

  • Heat 2 tablespoons of olive oil in a wok or large nonstick skillet over medium high heat. Add all of the bell peppers and onions. Cook for about 5 minutes or until they start to wilt a bit. Then add 2 tablespoons of teriyaki sauce and stir. Continue to cook.
  • In a second saute pan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chicken and cook. When the chicken starts to look cooked and not raw anymore, add 1 tablespoon of the teriyaki sauce.
  • When the vegetables are tender and the chicken is completely cooked and has started to brown, add the chicken to the vegetables. Stir in the remaining 1 tablespoon of teriyaki.
  • Cook for about 2 more minutes and then remove from heat.

Stir Fry Serving ideas

Serve with white rice or brown rice, or wrap in a tortilla and serve as a fajita! You could also serve your stir fry with rice noodles, cauliflower rice and as mentioned above, serve it with your favorite vegetables. I keep a lot of the ingredients for variations of this recipe on my grocery ingredient checklist because it’s such an easy go-to chicken recipe with tons of flavor and so many great options.

If you have picky eaters, this one also seems to work well because you can adjust it to their liking and still create a complete meal for your family.
