1 Tender Choice pork tenderloin, approximately 1 to 1-1/4 lbs
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/4 tsp dried thyme
1 T olive oil
Seasoned Pork Tenderloin Salad Recipe
Here is a great low carb, high protein, yummy salad idea that is easy to put together. One of the challenges of staying on track with new years resolutions is finding the time to eat right. This recipe, courtesy of Tender Choice Pork, is quick and easy and can give you one weeks worth of lunches in just 20 to 30 minutes. Cook up your pork tenderloin, grab an apple, bag of mixed greens, and your favorite dressing (I personally like it with a light blue cheese dressing) and you’re on your way to keeping your new years resolution of eating healthy.
Directions:
Preheat oven to 350° F. Season pork tenderloin with salt, pepper and dried thyme. Heat olive oil in a medium sauté pan. Sear the pork on all sides. Place the pan in the oven and roast the pork for 15-20 minutes, or until an internal temperature of 145° F is reached. Slice tenderloin into medallions, and serve over mixed greens tossed with sliced apples, and your favorite dressing.
