Appetizer Recipe Share: Bacon Rounds
I thought that I would share with you one of my favorite go-to “can I bring anything?” recipes. This yummy recipe was passed down to me by my friend Kathy who is an amazing cook, and it is the appetizer that I usually choose if we are going to an event that calls for one. It’s a finger food that is easy, quick …and most importantly … so yummy!
Bacon Rounds you will need:
1 Long Sourdough loaf (the skinny kinds, that make like 2-3″ slices)
Cheddar Cheese and Swiss Cheese (you can substitute either)
1 small can chopped olives
1 bunch green onions
1 Cup crumbled bacon (sometimes I cheat and buy the kind that is already cooked)
Here’s what you do: Slice sourdough bread. Cook bacon (or cheat and buy the already cooked kind either by the lunch meats OR the Salad topper kind…just make sure it is the chewy type and not the real hard ones) Put crumbled bacon parts in large bowl and add 1 Cup cheddar cheese and 1 Cup swiss cheese. Chop 1 bunch of green onions (don’t use stems)…then add 1 small can of chopped olives. Add two Tablespoons of Mayo and 2 Tablespoons of Sour Cream …now get your hands dirty and just mush all of this together. Add horseradish to suit your tastes (we like 3-5 teaspoons) Start slow adding the Mayo and Sour cream (just make sure to add equal parts) You only need enough to hold all the ingredients together. Next, line your bread slices out on a cookie sheet and pat the mixture onto each slice. Put in a 350degree oven just until cheese starts to melt. Heaven. I love these … so every time we bring them to an event, I end up filling up on them. EVERYtime. YUM.
