This Easy Marinated Cucumber Vinegar Salad is one that we eat quite often around here. It’s also one that I make often for gatherings. Use cucumbers right from your garden to make this simple summer salad.

I love summer and one of the reasons is that I’m crazy about eating and creating meals with produce from our garden!

It’s definitely one of my favorite summer salad recipes, as everyone seems to love it! After all, these are the types of recipes that are so good in the summer heat!

The more that you make this salad, the more you’ll be able to improvise with what you have on hand.

Sometimes I make it with more tomatoes, or even different kind of tomatoes, more cucumbers, etc – based on what might be flourishing in the garden at that time.

Once you start making this you’ll have a feel for what works well and as a result, you’ll come up with your own combinations that work.

What you’ll need to make this Easy Marinated Cucumber Vinegar Salad

Salad ingredients: 

Cucumbers, peeled and sliced evenly
Roma (plum) tomato, seeded and diced
Red onion, diced
Marinade/dressing

Wash and slice all of the above ingredients and set aside.

Ingredients for making vinegar marinade dressing for your cucumber salad:
(makes enough to double salad ingredients):

Olive oil
White distilled vinegar
Dijon mustard
Onion powder
Garlic powder
Thyme leaves
Dried oregano
Dried basil
Black pepper
Salt, depending on your preference

Instructions for making Marinated Cucumber Vinegar Salad

  1. Add marinade ingredients to quart-size jar. Seal and shake until blended.
  2. Place all vegetables in a medium bowl. Pour marinade over vegetables and toss to evenly distribute the marinade.
  3. Cover and refrigerate up to two hours. Remove from refrigerator one hour prior to serving if the oil has congealed to bring it to serving consistency.

Another reason that I love this recipe is that it’s SO easy to throw together. I do like to serve it cold, so ideally you’ll want time to chill it but it’s not necessary. 

Notes and Tips for this Salad

I’m definitely not a master gardener, however I seem to have it figured out when it comes to tomatoes and cucumbers.

I’ve shared my tips for growing cucumbers on the blog and I have to say, we’ve usually got more cucumbers than we know what to do with, which makes recipes like this a pretty regular part of our routine around her.

I’ll often just keep adding cucumbers and tomatoes to the salad bowl that is in the fridge and make one of these salads last a few days. They are great to be served with both lunch and dinner, however they also make a nice refreshing snack in the afternoon. 

If you want to kick up the flavor a few notches, we also like to add crushed red pepper flakes.

That will give your salad a kick with a bit of southwester flare to it! Another way that we change this one up a bit is to throw on a dab of greek yogurt.

Not everyone will have a love for this flavor combination, but we love it.

Other ways to enjoy this salad

Nevertheless, we have this salad in our fridge a lot during the summer.

I’ll also tell you that we love to put this salad on pita bread with a dab of greek yogurt and small cubed steak. It’s SO yummy, so having it on hand at all times give us other options as well. Either as a go-to for lunch or sides with other dishes, it allows me to always have a nice use of vegetables and on hand! 

In conclusion, just know that this is a recipe you can go to time and time again for a summer salad that always pleases!

This easy marinated cucumber vinegar salad is so wonderful and despite having quite a few herb and spice ingredients - it's really easy to make and will be a favorite summer salad!

Ingredients
