These Double Decker Quesadillas are a healthy choice at only 190 Calories and 11g of protein! My favorite thing about quesadillas is that they are super easy to make (my kids make their own!) and you can switch things up depending on what you have on hand. THIS recipe however, is amazing, so I definitely recommend trying these ingredients the next time that you make quesadillas and by making double decker quesadillas you will really up your quesadillas game!!
Double Decker Quesadillas
- Nonstick vegetable cooking spray
- 1 (15.25oz) can whole kernel corn, drained
- 1 cup S&W® Black Beans, drained and rinsed
- 2 cups (8oz) shredded cheddar or Monterey Jack cheese (low fat)
- 1/4 cup chunky salsa
- 3 tablespoons chopped fresh cilantro (optional)
- 12 (8in) plain or flavored flour tortillas

These also make a great appetizer option for parties or even a pre-dinner or mid-day snack. This is also a great recipe for sharing with teens and tweens and this is one that they can easily learn to make and a great starter recipe. I actually think I lived on quesadillas in college, and man I wish I’d had this recipe back then!
