I stumbled on this delicious recipe this morning while looking for something healthy (& fun!) to serve for dinner! You can use either yellow bell peppers or gold acorn squashes for the Jack-O’-Lantern.
Quinoa Stuffed Mini Jack-O’-Lanterns
Quinoa stuffing ingredients:
- 1 tbsp olive oil
- 1/2 cup onion, chopped
- 1/2 cup mushrooms, chopped
- 1 garlic clove, minced
- 1 tbsp fresh parsley, minced
- 1/4 tsp salt
- black pepper to taste
- 1/2 cup uncooked quinoa
- 2 tablespoons nutritional yeast
- 1 cup vegetable broth
